Cannabutter is the heart of your recipe. THC is fat-soluble, so it needs butter as a carrier. The preparation takes a few hours, but the effort is worth it.
Ingredients and utensils
You will need: 250 g unsalted butter, 7-10 g decarboxylated cannabis (depending on desired strength), 500 ml water, a large pot, a fine-mesh sieve or cheesecloth, and an airtight container. The water prevents the butter from burning and regulates the temperature.
Step-by-step instructions
Put butter and water in the pot and heat both over low heat until the butter has melted. Add the decarboxylated cannabis and keep the mixture at about 70-80°C for 2-3 hours – it should simmer gently, but not boil vigorously. Stir occasionally. After the simmering time, pour everything through the sieve into a container and press out the plant material well. Place the container in the refrigerator. After a few hours, the butter will separate from the water and solidify. Remove the butter layer and discard the water. Your cannabutter is ready.
Shelf life and storage
In the refrigerator, cannabutter lasts about two weeks, and several months in the freezer. Store it in an airtight container and label it clearly. This will prevent mix-ups.
The Brownie Recipe
Now it's time to get down to business. With your prepared cannabutter, you'll bake moist brownies that are evenly dosed.
Ingredients for 12 servings
You will need: 125 g cannabutter, 200 g dark chocolate, 200 g sugar, 3 eggs, 100 g flour, 30 g cocoa powder, 1 pinch of salt, optionally 100 g chopped nuts. These quantities yield a classic brownie pan (approx. 20x30 cm).
Detailed preparation
Preheat the oven to 175°C (top/bottom heat) and grease the pan or line it with parchment paper. Melt the cannabutter together with the chocolate in a double boiler – make sure the temperature does not get too high. Stir the mixture until smooth and let it cool slightly. Beat the eggs with the sugar until the mixture is lighter and fluffy. Add the chocolate-butter mixture and mix everything well. Mix flour, cocoa, and salt and carefully fold them in. If you are using nuts, stir them in now. Pour the batter into the pan and smooth it out.
Baking time and consistency check
Bake the brownies for 25-30 minutes. They should be firm on the outside but still slightly moist in the middle – that's what makes them fudgy.
